There is no menu at Bar High Five. You sit down, Ueno-san asks what you're in the mood for, and then he makes you the best version of that thing you've ever tasted. The room is small, intimate, and focused entirely on the craft.
This is the bar that taught the cocktail world what Japanese bartending actually means.

The Approach
Don't order off a menu — there isn't one. Tell Ueno-san your mood and trust the process. That's the entire point of being here.
The Timing
Arrive by 7pm or expect to wait. There are only 8–10 seats and no reservations are taken.
The Technique
Watch Ueno-san's legendary 'hard shake' closely. It produces a texture and temperature that other bartenders spend entire careers trying to replicate.
The Preference
If he asks, say 'something stirred.' His Manhattans are transcendent — dark, complex, and impossibly smooth.
